Black Bean Soup and Orange Mojo Tofu
Guess What? Viva La Vegan strikes again! This time I gave the black bean soup and Orange Mojo Tofu a try and was absolutely in love with both. I’ll admit I cheated and used canned beans for the soup, but other than that I followed all the directions, and was quite pleased with the result. Since a lot of the flavors seemed to overlap, I decided the tofu and soup would go well together, and served it up with a stack of tofu in the center of the bowl and the soup carefully poured around it.
I went with the immersion blender method on the soup, since I like some texture left in my soup, and I knew I could give it a quick whirl or two and get that perfect mix I was looking for. I’m convinced it was the tomato in here that really took the soup to another level, probably along with the red wine vinegar which gave it that perfect tang….nothing as bad as a bland bean soup, but this could not have been farther from that.
