Vegan Dad’s English Muffins
So in general genius fashion, we forgot to buy bread when we went shopping this week, and came home to discover we had about three slices left for the entire week. Not good. I wasn’t feeling up to making a loaf, but I had been eying the english muffin recipe in the Vegan Dad cookbook for awhile, and figured this was as good a time as any to give it a shot. Since I’m a giver, I also found the recipe on his blog, so you can check it out even if you haven’t bought his cookbook. (although I highly recommend you do)
I replaced the soymilk in this with hemp milk, and instead of the bread flour, went half and half unbleached white and whole wheat flours. You can’t even tell it’s whole wheat flour in there, which works out great for me. These are great with jam…and since the recipe made 15, there’s more then enough to last the entire week.
