One of my scores on black friday was a rotating belgian waffle maker that I got at Kohls, and while I had an old square waffle maker, when I saw this in the circular I just had to have it. There’s nothing better than fresh fruit on a waffle, and while we had strawberries and whipped cream in the house as well, I kept it simple with black berries and real maple syrup…total winner. These aren’t Vegan, since I was making breakfast for friends and didn’t want to experiment with flax, but they are dairy free.
I used the recipe from a Fairly Odd Tofu Mom using Vanilla Hemp Milk, and replacing the flax mix with three eggs. These came out PERFECT, and I will give the flax a try next time, I just didn’t want to push my luck on my first venture with the new waffle maker. That said, I believe the leftovers are calling my name….waffles, here I come!
