Baked Potato and Greens Soup with Potato Croutons

I must say that I also made miso soup this week….but the picture is cloudy and unexciting, and miso soup is pretty standard…you don’t need a recipe.  It IS on the back of every box of miso or dashi.  Somewhat more photogenic, was the baked potato and greens soup with potato croutons from V’con.  This is THE quintessential comfort food soup.  Not that I’m taking tomato soup out of my repertoire anytime soon, but this stuff is good.  I elected to squeeze half a lemon over each serving, which I think was key to its success…the original recipe is lacking an acid element.

The “crouton” was probably my favorite part though, it’s basically a french fry covered with crunchy cornmeal, which is pretty darn good idea.  I wish I’d thought of that myself…The one change I made was replacing the soy milk with hemp milk, which makes this one soy free, and I think the flavor’s still perfect.

In conclusion, all I’ve got to say is SOUP SEASON!!!!!!!  (It is upon us) look for more heartwarming dishes coming your way in the near future….
