Collard Greens aka Southern Comfort
The collard greens used here are another treasure from Michelle’s garden, and even though I’m in no way southern, (just a foodie wannabe) it’s fun to pretend and whip out my personal collard greens recipe from time to time. You obviously won’t find any ham hocks here, just as a note.
Approx 1 pound collards, de-stemmed, and cut into strips
1 cup veg. stock
1/4 cup brown sugar
1/4 cup ketchup
2 tbs. tabasco
1/4 cup apple cider vinegar
1 small onion, chopped
1 tsp liquid smoke
S+P
2 tbs olive oil
Directions
1. Heat the olive oil in a large pot over medium heat, and add minced onion. Sautee for 6-8 minutes, until soft and caramelized.
2. Add collards, and stir a bit to coat with oil. Add the rest of the ingredients and mix well to combine. Cover and reduce heat to a simmer.
3. Simmer for one hour, and then taste to be sure leaves are tender. If you’re happy, then they’re done!
These are pretty sweet, which isn’t usually my thing when it comes to greens, but I do enjoy them every so often. I particularly like mine over white rice, but that’s just a personal thing….you can do whatever it takes to float your own boat…
