This is my last recipe (at least for the time being) from Just the Food and it was a good one, although it didn’t photograph the best. I’m not sure if it was the peanut butter or what, but these stayed together better than any TVP recipe I’ve made in the past, and I was handling them pretty roughly.
The “logs” got kind of squished in the wrap, but I can assure you that they were succesfully shaped before being wrapped up in there and not in the least bit crumbly. I set these up with some baby spinach and vegan cheez sauce I had leftover from the nachos. I replaced the cheez with salsa when I did seconds, and may actually like that combo better…it was a bit lighter.
Considering I had two of these last night and another for lunch today, I’d say they were pretty darn succesful, and if you haven’t given them a shot, what on earth are you waiting for? Go!
