Sundried Tomato Basil Burgers

Yet another recipe courtesy of the famous Just The Food blog…and I REALLY liked this one.  My version isn’t gluten free like the original since I used plain old whole wheat flour, but I didn’t need it to be.  The only complaint I could make about these is that they were a bit mushy, but I’m sure if I’d left them in to bake a couple minute longer that would’ve been solved, I was simply too hungry.  I suck at waiting…

I also replaced the walnuts with sliced almonds in the pesto recipe, since I was going for a bit lighter flavor, and walnuts just aren’t my favorite nut.  (not that almonds are either, but I like them better than walnuts).  I served these up with a side of thin cut oven baked fries, which were lightly coated in canola oil, salt and pepper,  and then baked right alongside the burgers.  A perfect summer meal, if I say so myself…
