Pomegranate Molasses Tofu
The people at Pom Wonderful were kind enough to send me a box of their flagship Pomegranate juice to try out, along with some information about the benefits of said juice. (Although I must say that being Middle Eastern…I already KNEW pomegranate is awesome for you) and I couldn’t wait to get cooking. (Although a couple bottles may have vanished before I could decide on a savory use.)
That said, the first thing I used it for was a savory recipe from VwaV, because I’ve been seeking out pomegranate molasses forever with no luck, and I figured mixing together a tablespoon of POM with a tablespoon of molasses was pretty much the same thing. I’m sure it would’ve been delicious too, had I not accidentally poured a quarter bottle of liquid smoke in the mix. Oooops. This tasted like BBQ…to the tenth degree.
I served up the tofu over some green tea soba and steamed veggies, which thankfully did a great job of soaking up the sauce. I actually might start eating pasta with homemade BBQ sauce instead of marinara, because I was pretty into this. I still need to come up with something original in which you can actually TASTE the POM, and I’ll report back once I do. I’ve even been thinking about sauteing some spicy greens in it, but I’m worried that might be a bit much…thoughts??? The pomegranate version of lemon squares is another thought I’ve been having…but that’s not savory, which is my main focus.
