Breakfast for dinner is ALWAYS exciting…and somehow seems to be so much more delicious than breakfast in well…the morning. I had some leftover tempeh bacon from the BLT, so I figured I should make some “sides” for it.
The waffle maker hadn’t been out in awhile, so I went back to the banana waffles from V’con, skipping the walnuts, because I’m not a fan of nuts in my waffles, that’s just plain weird as far as I’m concerned. I don’t particularly like them in my brownies or cookies either…I’d rather puree them into things like cashew creams and pesto. I added some cinnamon to the waffle batter, but otherwise kept to the recipe.
That’s a tofu scramble in the back..I remember putting spinach, basil, salsa and sun dried tomatos in there…and I’m sure there was more, but I simply can’t remember. I know it was good though…as tofu scrambles always are…odd, since I hate scrambled eggs and always have. So that was Brenner…breakfast for dinner, and it had the added benefit of providing leftover waffles for breakfast the rest of the week.
