Sundried Tomato-Asparagus Quiche
Oooooh YUM. Sometimes I feel like I need to draw a family tree for recipes by the time they make their way to me. This one actually started it’s life in VwaV, a book that I OWN, but somehow missed it in. As far as I can make out, this version went from VwaV—>Pink Stripes–>Yeah, That Vegan Shit. I won’t bother re posting the recipe, since it’s available in both those places, and I’ve kindly provided you with links. This is very pretty, which I appreciate, and it made the whole kitchen smell awesome, which is also a plus. Even better? It takes a great photograph and I didn’t even need to take it out of the skillet for the close-up…
Another minute or two under the broiler probably wouldn’t have hurt this, but I was scared of burning it, and it’s definitely good as is. I’m also not sure what differentiates this from a quiche except the lack of crust…but hey, quiche..frittata, it’s all the same after the name. Fritatta to me sounds more like a hot salsa dance as opposed to an elegant but somewhat boring waltz…I mean quiche.
